Candied Small Chestnuts in Syrup from Italy
There are lots of different kinds of candied chestnuts out there - these are not marrons glaces, but candied chestnuts in syrup. Agrimontana has worked for decades to revive the traditional chestnut, or marrone, of Northern Italy. The Piedmont chestnut has an ideal texture and flavor for candying - starchy and sweet. The peeled chestnuts are poached gently in sugar syrup flavored with their own Bourbon vanilla.
