These Italian cannellini beans—from renowned Italian estate, Principato di Lucedio—are the quintessential white bean: plump, rich and creamy in texture.
Harvested in the late summer and early fall, Principato di Lucedio's Cannellini Beans are from the most current harvest—that means if you're cooking them right away, they won't require as long to soak (though if you stock up on them, like us, you might want to soak them overnight if they've been hiding in the back of your pantry for awhile).
How to use
Cannellini Beans from Principato di Lucedio are stunning served simply with good extra virgin olive oil and a sprinkling of fleur de sel. These versatile white beans are also a welcome addition to soups, stews and pasta dishes like Italian favorite Pasta e Fagoli.
Our tip: Cook a big batch of beans on the weekend and use them all week long—sauté them with your favorite greens, add to quick soups or toss with flaked Bonito del Norte tuna from Conservas Ortiz, Agrumato Lemon Olive Oil, chopped parsley and a spritz of fresh lemon juice for a quick yet satisfying salad.
About the producer
When Napoleon Bonaparte was ceded the Lucedio Estate in 1807, it's hard to imagine he intended to spend the time and effort that its future owner, Count Paolo Cavalli d'Olivola, would spend to grow Italy's finest rice. In 1937, the Count bought the estate, increasing the property to over 400 hectares of rice fields, creating Italy’s largest rice estate. Today, his daughter, Countess Rosetta Clara Cavalli d’Olivola, oversees the restoration of the estate and the farming of the rice fields with zealousness and utmost care.
