Flavor: A medium extra virgin olive oil, Castillo de Canena is a well-balanced, buttery oil busting with bright notes of tomato leaf, fresh herbs and green olive flavor with just a hint of bitterness and a tickle of pepper in the finish.

Uses: This is an approachable, all-purpose olive oil that lets other flavors shine. This Spanish oil begs to be paired with tomatoes—toss with halved cherry tomatoes and fresh herbs, drizzle over pan con tomate or use to finish bowls of salmorejo, a traditional chilled tomato and bread soup from Andalusia, Spain. Or use in romesco sauce, a Catalonian red pepper-based sauce, or as a base for a Spanish tortilla. Drizzle a generous dose over warmed beans or chickpeas with aleppo-spiced yogurt.
