Uses: Use this robust Tuscan oil in equally robust dishes—drizzle over grilled swordfish, bisteca alla fiorentina or atop sautéed bitter greens like broccoli rabe or escarole. Or use in bold sauces like arugula pesto, Italian salsa verde or green olive tapenade.
About the Producer: 200 years ago, the Bernardi family, of Frantoio di Sommaia, purchased the land neighboring their estate in Florence, Tuscany and planted the olive trees that today produce this incredible and unique extra virgin olive oil. The trees produce the olive known as Bianca... a difficult to trace variety often seen in Sardinia, not Florence. Nevertheless, the oil that they produce is stellar and packed with flavors that complement their cuisine perfectly.
