In early spring every year, the women of Abruzzo gather all of the leftover pasta in their pantries and make vegetable minestrone with the motley pasta odds and ends and new spring vegetables.
This package is filled with pasta of many different shapes and sizes, but amazingly, the blend cooks evenly, resulting in consistent al dente texture. Use Le Virtù to create your own minestrone, any time of year. The diverse shapes are fun to eat in other soups, too, such as pasta e ceci (pasta with chickpeas). Or take the less virtuous route and use it for a creamy mac and cheese.
