Boneless Mackerel in White Wine with Mild Spices
These French mackerels are packed in a sauce of dry Muscadet white wine complemented with aromatics of lemon, onion, carrot, cornichons, salt and spices. Light and tart, with a somewhat pickled flavor, they are lovely atop a green salad, mixed with chopped vegetables to make a fish salad, or in any preparation where the white wine sauce can act as a vinaigrette. Les Mouettes d'Arvor ("the seagulls of Arvor") is the only remaining seafood cannery in the Breton town of Concarneau, one of France's largest fishing ports.
