Mama O's Premium Kimchi Paste
Make Your Own Korean Kimchi at Home
Mama O's Premium Kimchi Paste is a concentrated blend of red pepper flakes, garlic, ginger, lime juice, fish sauce and a touch of sugar – No MSG. One jar of the kimchi paste will make about five pounds of kimchi (or half a gallon). It takes a couple days to ferment, but the result is sour, crunchy, fresh kimchi that is well worth the wait. Make traditional kimchi with Napa cabbage, green onions and cilantro. Or think outside the jar and use vegetables like baby bok choy, carrots, daikon and radishes.
Just can’t wait for kimchi? Create a quick Korean slaw inspired by the flavors of kimchi, but only takes minutes to make. Toss shredded Napa cabbage, sliced green onions and chopped cilantro with a dressing of lime juice, grape seed oil and a couple teaspoons of kimchi paste. Serve alongside grilled meats, on top of fish tacos or as zesty topper for hot dogs. Mama O’s Kimchi Paste is also equally delicious added to stir-fries, meat marinades or mixed into mayonnaise as a spicy condiment for sandwiches, burgers or as a dip for French fries.
About the Producer: Mama O’s Premium Kimchi was born out of owner, Kheedim Oh’s, desire to find good, authentic kimchi in New York City. He searched high and low for the perfect kimchi, but all he found was commercially made versions of the Korean condiment that were packed with fillers and MSG. So Kheedim decided to start making his own based on his mother, Mama Oh’s, recipe.
Fun fact: Making kimchi is only Kheedim’s day job. By night, he is a DJ in New York City. What does kimchi have in common with spinning beats? Kheedim says, “it’s just another type of cutting and mixing.”
