Spicy Green Mole Paste of Roasted Pumpkin Seeds
New from Hernan, Mole Pipián is a smooth and spicy blend of the earthy flavors of roasted pepitas (pumpkin seeds), sesame seeds and peanuts mixed with spicy chiles and epazote, a pungent herb commonly used in Mexican cusine. Unlike its brown counterpart, Mole Poblano, Hernan's Mole Pipián contains no chocolate and acquires its green color from the combination of pepitas, cilantro and spinach.
Green mole pairs well with vegetable, tofu and poultry dishes, although this green mole would taste delicious over slowly cooked pork and beef dishes. Simple to prepare, combine and heat Mole Pipián Paste with broth or water to create a deliciously complex yet well balanced spicy sauce.
