Panforte with Chocolate & Hazelnut
Angelo, pastry chef of Pasticceria Mariuccia, created this dense cake in honor of his daughter. Torta Marita is a take on her name, Maria Rita, and the confection is a chocolate and hazelnut-infused take on panforte, the traditional Christmas fruitcake of Siena, Tuscany. In addition to typical panforte ingredients including candied orange, honey and almonds, Angelo adds hazelnuts and cocoa. Serve wedges of the chewy, not-to-sweet cake with a triple crème cheese like Brillat Savarin, along with coffee or red wine.
