Ras el Hanout, meaning “top-of-the-shelf,” is a traditional Moroccan spice blend of a variety of spices, ground roots and often flowers. Mehdi Boujrada, owner of Seattle-based Villa Jerada, creates his aromatic blend using 16 different spices, rhizomes and dried flowers like saffron, fennel seeds, white peppercorns, galangal, star anise, cardamom, rose petals and lavender. Villa Jerada Ras el Hanout pairs equally well with both meats and vegetables. Use to season lamb chops, chicken or add to Moroccan-spiced meatballs. For you herbivores, sprinkle over root vegetables before roasting, mix a spoonful into hummus or for an unforgettable movie snack, add a teaspoon to melted butter and toss with popcorn.
