    I purchased these to use in a main dish salad along with oven dried tomatoes and blue cheese. They worked out great, holding their shape and making for a wonderful dish.

    One of the healthiest foods you can make, these in particular are also the best tasting and highest quality! I use them for an old family recipe for lentil soup from Calabria where my Mother Albina was born. Whenever I make this hearty , substantial dish, I think of her, my grandmother and our family stories. The lentils cook up tender and rich but never muddied with a subtle exquisite flavor enhanced by the other ingredients. I can't recommend them more highly than to say they are the ONLY lentils I use when I make my family's soup!

    All other brown lentils begone! These Umbrian beauties are delicious and make the best soup. We've been spoiled for any others now that we've had these. Family and friends agree that the supermarket variety are no longer worth eating.
