Scialatielli Pasta from Rustichella d'Abruzzo
A Traditional Pasta Shape of Naples
One of the newest additions to the Rustichella d'Abruzzo pasta family, scialatielli (pronounced shya-la-tee-yelli) is a mouthful to say and a delicious mouthful to eat. A common shape in the area around Naples, scialatielli are thin flat noodles like linguine, but about half as long, and with a cross section that is nearly square. The name comes from the Neopolitan word sciglià, meaning "to tousle," and on the plate, the pasta almost looks like a pile of tousled hair.
Scialatielli is wonderful served with a simple tomato sauce and fresh basil or, Amalfi Coast-style, with frutti di mare (seafood like prawns, mussels and clams). In the winter months, try it as a soup pasta in fish soup.
