Creamed Spanish Honey with Ginger
To make their Honey with Ginger, Alemany Mel y Turrón starts with Spanish orange blossom honey. The honey is creamed, a process where crystallized honey is gently churned or mixed to create a smaller, more stable crystalline structure. The creamed honey is blended with just the right amount of ginger, resulting in a smooth, luscious honey with a rounded sweetness and lingering gingery bite.
How to use
Stir a spoonful of Alemany Mel y Turrón's Honey with Ginger to your morning or afternoon tea for a delightful cuppa. Or use this Spanish honey in baking and sweet preparations. Mix with butter and slather over apples before baking, try it instead of sugar when making Tarte Tatin or add a spoonful to halved stone fruit (we love nectarines) before roasting and finish with a splash of Alemany's Muscatel & Orange Blossom Honey Vinegar.
This ginger-infused honey also shines in savory preparations. Use it to make a quick marinade for meat, fish and seafood: mix a tablespoon of honey with a couple spoonfuls of gochujang paste and generous splash of Organic Soy Sauce. Try using this easy marinade with salmon—marinate a couple salmon fillets for 2–6 hours, transfer to an aluminum foil-lined baking sheet and slow roast at 300°F until just barely medium in the middle, about 12–14 minutes, depending on the size of the salmon fillets. Broil the fish on high for 2–3 minutes until the glaze starts to caramelize and turn golden brown. Serve with rice or a simply dressed salad.

Alemany Mel y Turrón is an independent honey and turrón producer located in the remote valley of Os de Balaguer in northern Spain. They gather honey from all over Spain—and only from Spain—concentrating on monofloral (single flower) varieties like rare thyme, rosemary and chestnut honey. Alemany's artisanal production practices have remained unchanged for five generations.
