I first stumbled upon Rancho Gordo beans on a trip to San Francisco years ago. My universe of beans was quite small: black beans, kidney beans and chickpeas. All of the Rancho Gordo products are phenomenal. However, I have a preference for Mexican bean dishes. I have prepared these beans (always in a pressure cooker because I am too impatient to slow cook them) and used them for simple refried beans. They elevate that dish to new levels! I have also frozen prepared beans with no seasoning and them used them for a quick weeknight dinner. I will never use canned beans again!
