Freshly Pressed 2024 Harvest Extra Virgin Olive Oil

Séka Hills produces only a limited amount of this prized, emerald green extra virgin oil each fall. Made from Arbequina olives harvested this October, this California olio nuovo (Italian for "new oil") was bottled immediately after milling. Bright and bold, this olive oil brims with green notes of herbs, green almond, tomato leaves and bay leaf with a pungent and pleasantly bitter finish. New oil is as fresh and raw as extra virgin olive oil gets. It will continue to evolve and change in the bottle with new verdant flavors emerging with each pour. 

How to use

Olio nuovo is meant to be enjoyed right away, so pour with gusto. For a taste of heaven, douse a piece of warm, toasted country bread in Séka Hills Olio Nuovo and finish with salt and pepper. It is also exceptional drizzled generously over sautéed green vegetables like kale, broccolini and romanesco—just add a sprinkle of fleur de sel.

Use this freshly pressed California olive oil to garnish a salad of thinly sliced apple and Fuyu persimmons topped with plenty of shaved Parmigiano-Reggiano cheese and freshly cracked black pepper. Or, try substituting it for the butter in mashed potatoes or other vegetable purées such as cauliflower, parsnip or carrot.

About the producer

Yocha Dehe Wintun Nation, a federally recognized sovereign nation, has embraced the ancient Mediterranean tradition of growing olives and is using the most modern methods to produce remarkable California certified extra virgin olive oil. The Yocha Dehe named the oil Séka Hills after the Blue Hills where they farm in the Capay Valley.

In addition to its successful Cache Creek casino operations, the Tribe sustainably manages more than 7,300 acres with more than a dozen crops, partners with two organic growers, and grazes a growing herd of 120 cattle on tribal rangeland. The Séka Hills operation uses Super High Density plantings in the groves, mechanical harvesting and has built a state-of the-art mill.
