This black truffle-infused cheese hails from the Italian island of Sardinia. Made from sheep’s milk and aged for one year, Moliterno al Tartufo has a savory nuttiness enhanced by earthy ground truffles that have been injected into the wheel, creating dramatic black veins of umami flavor throughout the cheese. It’s rustic, pungent and definitely for those who love the bold flavor of truffles.
How to use
A great addition to grazing boards, Moliterno al Tartufo is best served cut into chunks, drizzled with a bit of chestnut honey or paired with a bold red wine. Since fresh truffles are not available year round, cooking with this cheese provides a delicious way to add the tuber’s unmistakable flavor to your cooking. Grate it over mushroom risotto before serving, shave it over a prosciutto and arugula pizza, or melt it into a cheesy truffle sauce for lasagna or a riff on fettuccine Alfredo. Similar to a fresh truffle, a little goes a long way.
