Great for sprinkling into smoothies or over oatmeal and yogurt, roasted cocoa nibs contain no sugar, but are rich in antioxidants. Cocoa nibs are the inside of the cocoa bean. When roasted (instead of being made into chocolate), they develop a crunchy texture and a bitter, fruity flavor more similar to a coffee bean than to a chocolate bar. Askinosie Roasted Cocoa Nibs are certified Kosher Pareve, vegan and gluten free.
How to use
Although they are not sweet, roasted cocoa nibs still bring their singular flavor and texture to desserts and sweets, whether sprinkled over ice cream, mixed into cookie dough or added to banana pancake and waffle batters. For savory dishes, use them like you would a handful of nuts—scattered over salads and grain bowls.
About the producer
Askinosie Chocolate is the brainchild of Shawn Askinosie, a lawyer-turned-chocolatier who with his daughter Lawren, established one of the United States’ first small-batch, craft chocolate companies in Springfield, Missouri. Shawn travels the world to meet with cocoa farmers and establish the most important part of the chocolate-making process, the farmer-maker relationship. Social responsibility is weaved into the fabric of Askinosie Chocolate. By removing from the equation brokers and other middlemen common in the commodity chocolate industry, Askinosie is able to share their profits directly with the farmers they work with in Ecuador, Tanzania, the Philippines and Amazonia, paying them a living wage for their labor and expertise.
