The legend goes that in the 17th century, a sweet old woman would make a secret candy for her nephews and nieces...when they saw it, they would exclaim, "tu nous gates", or "you spoil us". When she passed, she bequeathed the secret recipe to her favorite niece Lina and asked her to name them after their cries of joy, "nougat!". This much loved confection is a simple blend of egg whites, almonds, pistachios, and lavender honey. Made both in Provence and in Italy with slight differences in recipes, it has become a dessert staple in both countries.

Ours is made by a brother and sister team, Jacques and Ghislaine Savin, who took over the company from their father in 1989. A lifetime of experience goes into creating this tasty confection.

About the producer

Tucked in the village of Montélimar, in the Auvergne-Rhône-Alpes region of France, Suprem’Nougat G. Savin is the picture of small-batch artisan confection making. Husband-and-wife Georges and Simone Savin purchased the confectionery in 1957, eventually selling the business to their children who continue to operate it today alongside their own children. Run by just 15 employees, Suprem’Nougat G. Savin uses traditional techniques and tools to make everything by hand in miniscule 300-pound batches (tiny compared to industrial output).

Left out an important ingredient

I was looking in particular for a nougart that came from France and was sweetened only with lavanda honey. I knew that product existed because I had been in France the week before and was in Grasse and they had French nougart without added sugar. When I found and ordered the product it never mentioned sugar or glucose syrup. I ended up buying 2 for $11 for a small pig thinking it was expensive because it was more purely made. Wrong and misleading. They still have not been opened and would love to return them without spending extra money from my pocket.

The nougat for which I longed

My friend brought me a bar of Montelimar nougat from Belgium and i have searched for it in the US and never found it. As it turns out, there is quite a spectrum of nougat suppliers but Montelimar is the chewy honey tasting one that I crave. Soooo good.

I received a bar for Xmas! Loved it so much that I bought several for myself! Incewdibly tasty, nougat is creamy, nuts are fresh!
