Sweet-and-Sour Spanish Wine Vinegar from Catalonia

Mas d’en Gil Agredolç from Catalonia, Spain is a “sour-sweet Mas d'en Gil” wine vinegar with layered, complex flavors that reflect both its long barrel-aging and its origins in great wine. Mas d’en Gil winery is located in Priorat, a region famous for its voluptuous (and expensive) red wines made from Carignan and Grenache grapes. In fact, Mas d’en Gil wines regularly receive scores in the 90s from Robert Parker and other wine critics. It is from these excellent wines that Agredolç Wine Vinegar is made—and great wine makes great wine vinegar.

Florence Fabricant of The New York Times loves Mas d'en Gil too: "Copper-colored Mas d'en Gil, from Priorat, south of Barcelona, is more tart than sweet; use it to enliven a quick weeknight pan sauce for chicken or pork."

How to use

Agredolç Wine Vinegar's rich, deep flavor calls out for equally indulgent dishes where the vinegar's flavor can truly stand out. Use in a vinaigrette for a salad of blue cheese and pears, add to a pan sauce for pan-roasted porterhouse pork chops, or use it in a onion, raisin and Agredolç confit to serve with country pâté.

This versatile vinegar also elevates whatever produce it meets—from simply sautéed greens and grilled summer squash to strawberries and stone fruit. For an easy yet taste bud-tantalizing dish, top blistered asparagus spears with a hearty pour of Vieiru extra virgin olive oil, a drizzle of Agredolç vinegar and finish with a sprinkle of fleur de sel

Agredolç Wine Vinegar from Mas d'en Gil

Wow—an amazing vinegar with which to cook

This is my second bottle of Agredolc vinegar from Mad dawn Gil. Hands down, it is the most flavorful vinegar I have ever used. I just used it two nights ago for a Catalan Grilled chicken (a great recipe from the now defunct Square One SF restaurant) and it definitely kicked it up 1.5 notches. Expensive, but worth it if you can afford the extra dollars. After tasting the chicken, my dinner guests were eating the vinegar from a spoon. Super flavorful.
