Originally from the Italian region of Liguria, the Taggiasca olive is known for yielding delicate and fruity oils. This version from California’s Séka Hills, pressed from olives growing right across the street from their tasting room in the Capay Valley, is a great example of these elegant qualities. Lighter-bodied, but just as versatile as Séka Hills’ flagship Arbequina Olive Oil, Taggiasca offers notes of sweet almond, dried thyme and fresh herbs. A pungent and mild bitterness rounds out the finish. Drizzle over seafood, salads and other light dishes, or swap it in for butter in baked goods. A delicate to medium intensity oil.

Yocha Dehe Wintun Nation, a federally recognized sovereign nation, has embraced the ancient Mediterranean tradition of growing olives and is using the most modern methods to produce remarkable California certified extra virgin olive oil. The Yocha Dehe named the oil Séka Hills after the blue hills where they farm in the Capay Valley. In addition to its successful Cache Creek casino operations, the Tribe sustainably manages more than 25,000 acres with more than a dozen crops, partners with organic growers, and grazes a growing herd of 800 cattle on tribal rangeland. The Séka Hills operation uses Super High Density plantings in the Arbequina groves, mechanical harvesting, and mills onsite at its custom-built Alfa Laval mill.
