Whip up batches of hot cocoa, velvety chocolate truffles and other professional-level desserts with the first made-from-scratch cocoa powder produced in the United States. Askinosie makes their cocoa powder from the same beans they use to make their chocolate, achieving a single-origin powder rich with chocolatey flavor. Unsweetened and made without the use of alkalinizing agents, this natural cocoa powder is non-Dutch processed. The origin of cocoa powder will vary depending on availability. Certified Kosher (dairy equipment), vegan and gluten free.
How to use
Askinoise Unsweetened Cocoa Powder is great for brownies, cakes and frostings. Try your hand at Alice Medrich’s famous chocolate truffles, creamy puddings or add it to your favorite banana bread recipe. Keep in mind, natural cocoa retains the acidity of the chocolate and therefore may react differently with certain leavening agents. Read this article from Serious Eats for more information about the differences between natural cocoa and Dutch-processed powders.
About the producer
Askinosie Chocolate is the brainchild of Shawn Askinosie, a lawyer-turned-chocolatier who with his daughter Lawren, established one of the United States’ first small-batch, craft chocolate companies in Springfield, Missouri. Shawn travels the world to meet with cocoa farmers and establish the most important part of the chocolate-making process, the farmer-maker relationship. Social responsibility is weaved into the fabric of Askinosie Chocolate. By removing from the equation brokers and other middlemen common in the commodity chocolate industry, Askinosie is able to share their profits directly with the farmers they work with in Ecuador, Tanzania, the Philippines and Amazonia, paying them a living wage for their labor and expertise.
