Traditional Basil Pesto, Genovese-Style
Fragrant Ligurian basil, delicate extra virgin olive oil, salty Mediterranean pine nuts, Parmigiano-Reggiano cheese, sweet garlic, and a splash of bright white wine vinegar sets the Rustichella d'Abruzzo pesto concentrate on a class of its own.
This pesto concentrate is best diluted by adding equal amounts of olive oil to paste. Do as the Ligurians and toss with Rustichella d'Abruzzo Trofie green beans and potato. A very versatile concentrate which can be used in marinades and spreads, in stuffings and for rubbing on grilled fish as well.

Delicious, been buying this pesto for years and every time I serve it, folks love it!
At first glance this seems a very small jar but as others point out, the pungent pesto within is best diluted with a little less than an equal amount of good olive oil and a generous measure of grated pecorino or parmigiana. I chopped some green beans into one inch lengths and threw them in the pasta water for the last three minutes the pasta cooked for an authentic Genoese touch. The flavor is sublime - not nearly as strong as some commercial pestos, but much deeper and longer lasting flavor. I'll make sure to always have a couple of jars of this on the shelf.
I tried this with the pasta that I ordered from here this past summer and it was a great item to have on hand. I bought a few so I will be sure to use some this winter when I want the great taste of summer. Pick up a couple!
