Tirrena is the dried pasta line from the renowned Tuscan estate Frescobaldi. Extra virgin olive oil lovers may recognize the Frescobaldi name from their vibrant green bottles of extra virgin olive oil, which have been among Market Hall Foods’ best-sellers for years.
Tirrena Linguine is a semi-whole grain pasta made from three ancient durum wheat varieties—Senatore Cappelli, Khorasan, and Evoldur—grown on the Frescobaldi estate. The Frescobaldi family carefully selected these particular wheat varieties specifically for their pasta, as these plants are well-suited to the soils and temperate climate of the region and above all, their inimitable flavor.
The pasta itself is made at Pastificio Artigiano Fabbri, an artisanal pasta factory in the Tuscan region of Chianti where time-honored family traditions dictate the pasta-making process. Extruded through bronze dies and slowly air-dried for 120 hours at the optimal temperature, Tirrena Linguine boasts that rough texture that cooks up perfectly while still retaining the natural flavor of the wheat.

About the producer
The Frescobaldi family has been making wine and olive oil in Tuscany since the Renaissance. In the 1980s, the family formed a consortium of olive oil producers and today manages 11,000 acres of land in Tuscany devoted to olive orchards, vineyards and wheat fields. As the leader of the consortium, Frescobaldi emphasizes the concept of terroir which allows the unique environmental conditions of Tuscany to inform every decision in the production process, from which crops to grow to how to transform them into top-shelf pantry staples.
