Masseria Mirogallo Pomodori Pelati, or hand peeled tomatoes, are a pantry powerhouse, retaining their hearty texture and sweet, bright acidity even after cooking. Keep a jar of these whole, peeled tomatoes on hand for making ragù, braises or a simple starter dish, like Rolando Beramendi's Spaccatelle di Pomodori (Broken Tomato Halves).
Tomatoes peeled by hand are a typical Lucan specialty from Basilicata, and the Masseria Mirogallo family takes great pride in following traditions with all their authentic Italian products. First, the ripe tomatoes are hand harvested, carefully cleaned, and then quickly blanched and peeled by hand. The tomatoes are then jarred and briefly pasteurized, to ensure the natural flavor isn’t cooked out of the sealed jar. They maintain a purity, sitting in nothing but their own juice, no salt or water has been added.
About Masseria Mirogallo
Since the 1800s, one of the largest farms in Lucana Valley of Basilicata, Italy has been owned by the Mirogallo family, who specializes in the cultivation and preservation of heirloom varieties of fruit and vegetables from which they hand-make very high quality pantry products. The Mirogallo brothers are quick to point out that everything they put in a jar comes from their fields, and that the only preservatives they use are vinegar and salt. Every summer, the Mirogallo farm is bustling with many farm-workers hand harvesting perfectly sun-ripe fruit and vegetables. Inside the old white washed farm building, a state-of-the-art kitchen transforms the bounty of every day into a wide array of jars of all color and sizes.

These tomatoes are the “quality ingredient” that allows the home chef to craft great recipes. But having said that, first time buyers should note that, as labeled, there is NO seasoning in the jar other than basil leaves. These fruits are a fresh and clean palate that most users will enjoy developing their own way using great salt or other seasonings.

Outstanding product. Very hard to find here in the US.
Blend them with a bit of garlic, dash of salt, and some olive oil. A lovely and light pasta topping.
